Chicken Wrap

Cook time 10 minutes
Prep time 5 minutes
Serving size one

Ingredients
1 chicken breast
Olive oil
1 tomato
Lettuce
corn tortilla *
Optional
Pepper
Ranch
Other seasoning for chicken

Directions
Cook chicken breast 10-15 minutes
Chop veggies
Put inside tortilla
Add pepper and ranch
Fold

Chicken Salad

This is a quick and easy meal for either lunch or dinner.
Cook time 15 minutes
Prep: 5 minutes

Ingredients

1 small chicken breast
Oregano
1 small tomato
2-3 leaves of lettuce
ranch dressing or
Olive oil, salt, and pepper.

Directions

Sprinkle oregano on the chicken breast and cook it for about 20 minutes.

Cut up the veggies and toss them in a bowl. When its ready cut up the chicken and add ranch or olice oil, salt, and pepper.

Fruit Salad

For the past couple of weeks I have been making  fruit salad each day. It is a wonderful healthy option for breakfast or lunch.

Today I tossed together what I had in the kitchen, you can add whatever fruit you happen to have as well.

Ingredients
One orange
Seven strawberries
Pineapple
Orange juice

Extra
Yogurt

Directions
Chop and toss into a bowl
Add four teaspoons of orange juice to keep the fruit fresh.
Cover it with a lid and refrigerate.

Extra
After putting fruit into your serving bowl add some yogurt!

Chocolate cupcakes

It is important to be healthy and to be good stewards of our bodies. My mom has been learning about being wheat free through a book titled, "Wheat Bellies," where she learned that the wheat we have now as been genetically modified and is very unhealthy. After reading this book and doing more research she decided to begin a wheat free diet. She has changed the diet of our family as well. This diet also shapes our dessert choices. We now bake and eat wheat free chocolate cupcakes! And here is a secret I'll share with you: She lets us eat as many as we want!

Ingredients

1/4 cup coconut oil
1/4 cup cocoa powder
1/8 tsp. sea salt
1/2 tsp. baking soda
3 eggs
1/4 cup coconut oil melted
1/3 cup pure maple syrup
1 Tablespoon vanilla extract

Extra
1/2 dark chocolate chips
2 Tablespoons of coconut oil

Directions
Grease cupcake pan/muffin pan with coconut oil
whisk coconut flour, coconut poder, sea salt, and baking soda
Add in the eggs, coconut oil, maple syrup, and vanilla extract until uniform.
Pour into you pan.
Bake for 18-20 minutes at 300 degrees

Extra
Melt in small pot under medium heat until reached reached desired consistency

Cheesy Polenta Casserole

I for one am an advocate of a wonderful casserole because they can be made ahead of time and are ready to be popped into the oven whenever your little heart desires.

On the Menu Cheesy Polenta Casserole
Cook Time prep:15 minutes   baking 15 minutes

Ingredients
1/2 of one bag of shredded Swiss Cheese
Oregono or Parsely
Salt
Pepper
1 (16 oz.) tube of ready-made polenta
1 onion
1/2 of one jar of tomato sauce
1 package of Jimmy Dean's regular pork sausage
 butter or coconut oil
 extra:
small portion of another meat ( ham or bacon)

                                         Steps

cut the onion in small pieces
cook sausage and add in the onions over medium heat
add: salt, pepper, and parsely
once finished pour into large bowl and mix in 1/2 jar of tomato sauce [mix one]

grease up pan with  butter or coconut oil
cut up polenta package into .5 inches wide strips


 from top to bottom:
1/2 of polenta slices
entire [mix one]
add shredded swiss cheese
add the other 1/2 of polenta slices
[add bacon or ham if desires]
add shredded swiss cheese





put in the oven for about 15 minutes at 300 degrees
